Product Description:
- Hamour is a part of grouper fish
- Hamour has an indonesian name = "kerapu" and latin name is "Epinephelus spp"
- All Hamour that we used and processed are all wild caught fish that is caught.
- We only use raw Material from the best quality and we used is caught by two methods, longline and gill net.
- Hammour catching boat that we used are 2 kind cold chain management boat: ice present on board as well as boat with frozen on board facilities.
- Normaly hamour were caught fresh, then being frozen on board
- The flow chart hammour fillet skinless through stage : scalling, deheading, filleting, deboning, Skinning out, retouching, vacumming, freezing, packing and storing.
- Product of Hamour fillet skin less produced by highly maintained & closely monitored its cold chain system, in order to produce best quality product
- Water and ice used within the production of Hamour fillet skinless is according to drinking water standards and processed through UV so that it is safe from microorganisms.
- Our Hamour fillet skinless production process is according to GMP, SSOP, HACCP.
- After production, the finish good will be tested in accredited independent laboratory.
- Finish product must be kept at -18 degree celcius (0 degree farenheit) and it will lasted 2 years at propper cold storage
